Melting Moments -Butter Biscuit

I normally call them smiley faces. I made them for my kids birthday few times, to take it to school friends and they loved it.  Kids love it when I decorate it with some 100s & 1000s and choc-chips. you can also use icing tubes to decorate. This takes very easy to prepare the mixture and you can get kids involved as well. They would love to decorate biscuits. Will be a good activity for kids during school holidays.

The main ingredients are:
  • Butter Unsalted - 500gms
  • Caster Sugar (Powdered Sugar) - 225ml
  • Self Raising Flour - 500ml
  • Plain Flour - 250ml
  • Custard Powder - 250ml

Bring butter to room temperature. mix with caster sugar first and then add all the other ingredients and mix them well. roll it on the bench top or on a cutting board and then use biscuit cutters to cut and place them on a baking tray. leave at least 2-3cm between each biscuit. Bake for 16 to 20 mins on medium setting (about 200-220 degrees).

You can make coconut biscuit using the same ingredients, add some desicated coconut and a pinch of cardamom powder. that will taste very nice, just like south indian iyangar bakery biscuit.
